# Expert Hints:

01 -
  • The chickpea pasta holds up beautifully without getting mushy, even after sitting in dressing for days
  • Fresh herbs make everything taste expensive and intentional
  • Its one of those rare dishes that actually tastes better the next day
02 -
  • Chickpea pasta can go from perfect to mushy in seconds, set a timer for two minutes less than the package suggests and taste test
  • The salad needs that chilling time, it is not optional, the herbs need time to release their oils into the dressing
03 -
  • Use a Microplane for the lemon zest, you want the oils without any bitter white pith
  • Massage the red onion with a pinch of salt before adding it to tame any harsh bite
