04 - Add baby spinach or arugula to the skillet and cook for 1-2 minutes just until wilted.
05 - Remove from heat and stir in lemon juice and chopped parsley.
06 - Sprinkle crumbled feta cheese over the top and serve warm directly from the skillet.

# Expert Hints:

01 -
  • Everything cooks in one skillet, which means less cleanup and more time to actually enjoy your meal.
  • The combination of briny olives, tangy feta, and fresh lemon creates layers of flavor that taste like effort but require almost none.
  • Its naturally keto and low carb without feeling like diet food, just bright, satisfying, and full of Mediterranean sunshine.
02 -
  • Dont add the lemon juice while the skillet is still on the heat or it can turn bitter, wait until youve pulled it off the burner.
  • If your ground chicken releases a lot of liquid, let it cook an extra minute or two to evaporate before adding the tomatoes, otherwise the dish can turn watery.
03 -
  • Use a cast iron skillet if you have one, it holds heat evenly and makes everything taste a little more rustic and delicious.
  • Taste before you add extra salt because the olives and feta are already salty, I learned this after over salting my first attempt.
